Nothing smells better or tastes better than homemade bread fresh from the oven. This is my favorite.
2 T. rapid rise yeast (or 2 pkgs.)
1/4 cup oil
1/3 cup warm water
1 3/4 cups warm water
1/3 cup honey
1 T. salt
3 cups whole wheat flour
3 to 4 cups unbleached white flour
Dissolve yeast in 1/2 cup of warm water in a large mixing bow. Stir in honey, salt, oil, and 1 3/4 cups warm water. Mix in the whole wheat flour. stir in enough of the white flour to make dough easy to handle ( about 3 cups). using the last 1 cup of the white flour, knead until smooth and elastic, adding more flour as needed. Place in a lightly greased bowl and cover. Let rise until double, about 35 to 45 minutes. Punch down dough; divide in half. Shape into loaves and place in greased loaf pans. Brush lightly with butter. Let rise until rise until double. Heat oven to 375. Place loaves on low rack so that pans are in center of oven. Bake until loaves are deep golden brown and sounds hollow when tapped; about 35 to 45 minutes. Remove from pans, cool on wire rack.
