Freezer Meals


Lasagna

 (6lb) 1 lb hamburger
(4 ½ cups) ¾ cup water
(192 oz) 32 oz Spagetti Sauce
(6 tsp) 1 tsp salt
(48oz) 8 oz cottage cheese
(96 oz) 16 oz Mozzarella Cheese
(1 ½ cups) ¼ cup Parmesan Cheese
(6) 1 egg
(3 cups) ½ cup sour cream
(3 pkgs) ½ pkg dry Ranch Dressing Mix
(6 TBLS) 1 TBLS Parsley Flakes
(48 oz) 8 oz Lasagna Noodles, uncooked

Brown beef, drain, add water, spag sauce, salt.  Bring to a boil, reduce heat, let simmer.  Combine cottage cheese, parmesan cheese, sour cream, egg, ranch mix, parsley. Set aside.  Put a little spag. sauce in bottom of dish, then layer uncooked noodles, cottage cheese mixture, grated moz cheese, and meat mixture.  Repeat again, ending with meat mixture on top.  Sprinkle Parm cheese on top.  Cover tightly with foil.  Bake 375 for 1 hour.  Let stand 10 minutes before serving.

Sausage and Pepperoni Casserole

 (6 lbs) 1 lb Italian Roll Sausage
(72 oz) 12 oz wide egg noodles, cooked
(168 oz) 28 oz pizza sauce
(12 cups) 2 cups shredded mozzarella cheese
(36 oz) 6 oz sliced pepperoni

Cook sausage.  In greased dish, layer half the noodles, half sausage, and half the remaining ingredients.  Repeat with 2nd layer.  Bake at 350 degrees for 35-40 minutes. 

Chicken Enchilada Casserole

 (6) 1 onion, chopped
(12) 2 TBLS oil
(90 oz) 15 ounce stewed tomatoes with juice
(48 oz) 8 ounce tomato sauce
(24) 4 oz chopped green chilies
(6) 1 pkg enchilada sauce mix
(6) 1 clove garlic, minced
(21 cups) 3-4 cups cooked chicken
(3 tsp) ½ tsp salt
(72) 12 corn tortillas
(12 oz) 1 can sliced black olives
(96 oz) 16 ounce grated Monterey Jack cheese

Saute onion in oil until translucent, but not brown.  Add tomatoes, tomato sauce, green chilies, enchilada sauce mix, garlic, salt and chicken. Bring to boil, turn heat down and simmer for 15 minutes. In greased baking pan, place 4 (TWO)  tortillas and spread evenly with 1/3 chicken mixture over top.  Add cheese evenly, repeat layers twice, reserving some cheese. Cover and bake at 350 degrees for 35 minutes.  Remove cover from dish and sprinkle remaining cheese on top.  Return to oven for 5 minutes.
