We always have this for Christmas morning brunch.
6 eggs
1 cup half and half or milk
1 cup diced ham or bacon
1 1/2 cup grated Monterey Jack cheese
1 12 cup grated cheese cheese
diced onions to taste
diced green pepper to taste
small can diced green chilies, optional
24 oz. hash brown potatoes
Mix above and set aside. In a 9.13 inch pan. Put 24 oz. thawed shredded potatoes. Pour on 1/2 cup melted butter. Bake in 375 degree oven for 20 minutes fluffing with fork once or twice. Then pour over egg mixture. Stir with a fork and then bake at 375 degrees for 35-40 minutes. Serve with salsa or ketchup.
