Blueberry Muffins

1 egg
1/2 cup milk
1/4 cup veg. oil
1/1/2 cups flour
1/2 cup sugar
2 tsp. baking powder
1/2 tsp. salt
1 cup blueberries or mixed berries

Preheat oven to 400. Beat the egg, then add milk and oil. Stir. Mix dry ingredients in another bowl. Blend dry ingredients in to egg mixture and stir until moist (the batter will be slightly lumpy). Gently fold in berries. Fill muffin cups 2/3 full and place cups in muffin tins. Bake for 15 minutes or until golden brown.
