Peach Cobbler


2 quarts peaches                       
½ tsp. salt
1 ½ cup sugar                        
½ tsp. almond extract
2 Tbsp. cornstarch                        
2 Tbsp. lemon juice
3 Tbsp. butter, melted

Topping:
2 cups Bisquick                        
1 cup grated cheddar cheese, mild
4 Tbsp. butter, melted            
1 to 1 ½ cup milk

In large bowl, mix together peaches, sugar, cornstarch, and salt and put into 9 x 13-inch pan. Sprinkle with mixture of almond extract, lemon juice and butter. Bake in 400 preheated oven for 15 minutes, until thickened and bubble. For Topping: Mix together Bisquick, melted butter and cheese in medium bowl. Add milk until thick enough to form moist dough. Drop dough mixture on hot peaches and bake another 15 minutes. Serve with ice cream or cool whip on top. Serves 6 to 8.
