Peanut Butter Fingers

1 cup butter
1 cup brown sugar
1 cup peanut butter
3/4 cup sugar
3 eggs
1 tsp. baking soda
2 3/4 cup flour
3/4 tsp. salt
1 tsp. vanilla
4 cups oatmeal

Combine butter, sugars, eggs and peanut butter. Add in soda, vanilla, flour, oatmeal, and salt. Bake in greased cookie sheet at 350 for 10 minutes. Spread with peanut butter and frost with chocolate frosting.

Peanut Butter Cookies

1 cup butter
1 cup white sugar
1 cup brown sugar
1 cup chunky peanut butter
2 eggs
1 tsp. vanilla
2 1/2 cups sifted flour
1 tsp. baking powder
1/2 tsp. salt
1 tsp. baking soda

Sift together flour, baking soda, baking powder and salt; set aside. Cream butter and sugar, then add peanut butter; beat until thoroughly blended. Add egg and vanilla; beat mixture until light and fluffy. Add sifted mixture, small amounts at a time, beat until smooth. Wrap dough in plastic wrap and chill thoroughly for easier handling. Roll into balls 2 inches apart on cookie sheet. Press with fork. Bake 10-12 minutes.

Snicker Doodles


1/2 cup butter or margarine
2 tsp. cream of tartar
1/2 cup shortening
1 tsp. soda
1/12 cups sugar
1/4 tsp. salt
2 eggs
2 T. sugar
2 3/4 cups flour
2 tsp. cinnamon


Preheat oven to 375 degrees F (190 degrees C). In a medium bowl, cream together the shortening and 1 1/2 cups sugar. Stir in the eggs. Sift together the flour, baking soda, cream of tartar, and salt; stir into the creamed mixture until well blended. In a small bowl, stir together the 2 tablespoons of sugar, and the cinnamon. Roll dough into walnut sized balls, then roll the balls in the cinnamon-sugar. Place them onto an unprepared cookie sheet, two inches apart. Bake for 8 to 10 minutes in the preheated oven. Edges should be slightly brown. Remove from sheets to cool on wire racks.

Ultimate Chocolate Chip Cookies

3/4 cup butter flavor shortening
1 1/2 cups flour
1/4 cup quick cooking oatmeal
1 1/4 cups firmly packed brown sugar
1 tsp. salt
2 T. milk
3/4 tsp. baking soda
1 T. vanilla
1 cup chocolate chips
1 egg
1 cup chopped pecans or walnuts, optional

Heat oven to 350. Combine crisco, sugar, milk, and vanilla in large bowl. Beat at medium speed of electric mixer until well blended. beat egg into creamed mixture. Combine flour, salt, and baking soda. Mix into creamed mixture just until blended. Stir in chocolate chips and nuts. Bake for 8-10 minutes.

Coconut Almond Dreams

I got this recipe from my boss's wife when I worked at Northside Independent School District. She was from England. I make them during Christmas.

1 cup butter or margarine, softened
1 cup sugar
1 egg
1/2 tsp. almond extract
1 1/3 cups flaked coconut
2 1/4 cups flour
1/2 tsp. baking soda
1 egg white
1 T. milk
Almond or pecan halves, toasted

Cream butter and sugar. Beat in egg and extract. Stir in 1 cup of the coconut. Stir flour with soda and 1@ tsp. Add to creamed mixture. Mix well. Knead in bowl until dough clings together. Shape into three 8 inch logs. Roll in remaining coconut. Wrap in waxed paper or clear plastic wrap. Chill well. With sharp knife cut each roll into 24 slices. Place 2 inches apart on un-greased cookie sheet. Beat yolk with milk. Brush over cookies, lightly. Press a nut on top of each cookie. Bake at 325 for 17-20 minutes. Makes 6 dozen.

Mel Gibson Cookies

A friend from church, Angela Harris shared this recipe with me.

1 cup butter or margarine
1 cup peanut butter
1 cup sugar
1 cup packed brown sugar
2 large eggs
2 tsp. vanilla
3 cups flour
1 tsp. baking powder
1 tsp. baking soda
1 bag of mini snickers (milky ways work well also)

Preheat oven to 350. Mix together butter and peanut butter. Then cream in sugar and brown sugar. Beat in eggs and vanilla. In another bowl, mix dry ingredients. Slowly mix into butter sugar mixture. Mix thoroughly. If desired, chill for a while take a large spoonful of dough, and wrap it around the snickers until covered. You can roll it into a ball to make it a little smother. Bake 10 to 12 minutes or until just light brown.

Holly Cookies

Grandma Betty loved to bake during the Christmas season. She made lots of yummy treats to give away. She always made these every year.

1 square of butter or margarine
10 oz. bag of marshmallows
1 tsp. vanilla
4 cups corn flakes
1 tsp. green food coloring
red cinnamon candies

Melt butter and marshmallows. Add coloring and vanilla. Add the corn flakes. mold into small wreaths on waxed paper and add the berries.

Chocolate Chip Bars

This recipe is from Maurie Garr.

2 sticks margarine
3/4 cups sugar
3/4 cups brown sugar
1 tsp. vanilla
2 eggs
2 1/2 to 3 cups flour
1 tsp. baking soda
1/2 tsp. salt
2 cups chocolate chips

Bake at 375 degrees for 20 minutes in a 9x13 pan. Cool completely.

Raspberry Bars

1 cup butter
1/2 cup sugar
3 cups flour
1/2 cup raspberry jam
Glaze:
2 to 3 Tbsp. water
1 cup powdered sugar

Cream butter and sugar. Blend flour in, as you would pie crust. Sprinkle water over. Blend . Keep mist. Roll 1/3 of dough on flour surface. Roll into log on cookie sheet. With side of finger make a groove down the center. Roll in nuts. Place on un-greased cookie sheet. bake at 375 for 10 minutes. Fill with jam. Bake 10 minutes. While hot put on powdered sugar glaze.

Prize Winning Chocolate Chip Cookies

I got this from a sister in our the Brindisi Branch when we lived in Italy. It never disappoints!

2 sticks butter or margarine
½ cup white sugar
1 tsp. vanilla
2 eggs
2 cups flour
1 tsp. baking soda
1 ½ cups oatmeal
1 cup brown sugar (packed)
½ cup peanut butter

Use instructions on package of the chocolate chips for chocolate chip cookies. Use the measurements here instead of the ones on the package. Add peanut butter to sugar/butter mixture. Add the oatmeal with the flour.
Then add any or all:
½ cup chopped nuts
½ cup raisins
½ cup coconut flakes
6 oz. package chocolate chips
