1 1 1/4 cup milk, scalded
4 T. butter
3 T. sugar
1 tsp. salt
2 eggs, beaten
1 T. rounded, yeast
4 cups flour
In a small bowl dissolve yeast and 1 tsp. sugar in 1/4 cup warm water. Melt butter in scalded milk. Add eggs, sugar, salt, and 1 cup of flour. Stir very well to develop the gluten. Add the dissolved yeast. Mix in remaining flour. Knead for 3-4 minutes, just until the dough has a soft consistency. Place the dough into a greased bowl, covered with plastic wrap and raise for 20 minutes. Roll out the dough and shape. Bake for 10-12 minutes at 400 degrees.
Many variations of rolls can b made from this recipe. They include:
Cloverleaf
Crescent
Parker house
Orange bow knots
Butter flake
Bread sticks: season with garlic salt, dill and freshly grated parmesan
Cinnamon rolls: Roll dough 11/2 inch thick and into a rectangle. Spread with these ingredients:
1/4 cup butter
1/2 tsp. cinnamon
1/2 cup brown sugar
1 cup raisins (optional)
Starting with the long side of the rectangle, roll the dough and cut with thread or dental floss to form cinnamon rolls. Place in a 9x13 pan. Bake at 400 for about 15 minutes. Frost immediately with vanilla or orange frosting.
